Quinoa salad

If you have no quinoa try couscous or bulgur wheat. This recipe makes enough as a side dish for four people, or a main meal for two.


  • 1 cup of quinoa
  • 2 ripe tomatoes
  • 1 red or yellow pepper
  • a bunch of parsley
  • a bunch of mint
  • A handful of crushed roasted walnuts or almonds
  • the dressing:
  • juice of a lemon
  • 1 tablespoon tomato puree
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of paprika
  • salt and pepper to taste
  • 5 tablespoons of olive oil


Simmer the quinoa in 2 cups of water for 15 minutes until soft and all the water is absorbed. Make the dressing, grind the cumin seeds, add all the other dressing ingredients and mix them up together. Pour the dressing over the warm, cooked quinoa. Chop the vegetables and herbs, when the quinoa has cooled, add the chopped vegetables and nuts. Mix everything together and serve!
