This is a recipe for a delicious cake with no added sugar.
- 1 & 1/2 cups of chopped dates
- 1 cup of milk
- 1 teaspoon of vinegar
- 1 & 1/2 cups of whole wheat flour
- 2 teaspoons of baking soda
- 1/2 teaspoon of ground cinnamon
- 1/2 teaspoon of ground ginger
- 1/2 cup of butter
Pre-heat the oven to 375 F. Grease and line a 7 inch square cake tin. Put the milk and the dates in a pan and heat until they reach boiling point. Then turn of the heat and allow the mixture to cool for about 15 minutes. Add the vinegar and stir.
Put all the dry ingredients into a mixing bowl. Rub in the butter until the mixture looks like breadcrumbs. Then stir in the milk/dates/vinegar mixture. Spoon it into the cake tin. Bake for 20-25 minutes, until firm to touch and golden brown. Leave the cake to cool for 10 minutes before turning it out of the tin. You can slice the cake into squares to serve.
