Cashew Cream

This is easy to make and very versatile. You can add different flavorings besides lemon to make the cream savory or sweet.


  • 1 cup of raw cashews or cashew pieces
  • 2 tablespoons of vegetable oil (I use olive oil for savory applications and a vegetable oil with no taste for cake fillings etc.)
  • 1/4 of a cup of filtered water
  • Optional you can add any combination of the following- 2 teaspoons of lemon juice, salt and pepper, oregano, other dried herbs, garlic)


Soak the cashews overnight in water. Drain and rinse them. Put everything in a food processor and blend until smooth. You may need to add more water to get the consistency that you like. This can be kept in the refrigerator for a week.
