- 2 cups of cooked cannellini or other white beans
- Juice and zest of a lemon
- 1 clove of garlic
- 1 small onion
- 1 green chilli pepper
- Salt to taste
- 1 tablespoon of nutritional yeast
- 4 tablespoons of olive oil
Chop the onion and gently fry in a tablespoon of the olive oil along with the chilli and garlic. Cook until softened (about 5 or 6 minutes). Put all of the ingredients into a food processor and blend.
This puree is delicious on toast or as an accompaniment to roasted veggies.
