Plum Torte

Ingredients

       1/4 cup of coconut sugar

       1/2 cup of softened vegan butter

       1/2 cup of almond flour

       1 cup of wholewheat flour

       2 teaspoons of baking powder

       2 tablespoons of ground flax mixed with 8 tablespoons of soy milk

       1 teaspoon of lemon juice

       1/4 teaspoon of almond essence

       1/8 teaspoon of salt

       12 plums, halved with pits removed

 

Method

Preheat the oven to 350F.

Grease a 9-inch springform cake pan.

Cream the butter and coconut sugar together in a bowl. Slowly add all the rest of the ingredients, beating them together as you add to create a soft cake batter. Add 1 or 2 more tablespoons of soy milk as needed.

Spoon the mixture into the cake pan, place the plum halves on top of the batter.

Bake for 50 to 60 minutes. Allow the cake to cool to lukewarm before serving with some vegan yoghurt.
