Cherry Almond Scones


1 cup of ground almonds

1 cup of spelt or barley flour

1 tablespoon of baking powder

3 tablespoons of chopped dates softened in some of the soy milk

1/2 cup of dried cherries

1/2 cup of soy milk

5 tablespoons of vegan butter

1/2 teaspoon of salt


Set the oven to 450 degrees. Line a baking sheet with parchment paper.

Mix the flours, salt, baking powder together. Rub in the vegan butter until breadcrumbs consistency. Stir in the cherries then add the dates and milk to form a dough. Knead for a few seconds then tip onto a floured surface. Make an 8 inch round with your hands and cut into 8 wedges. Transfer to the baking sheet and bake for 12-15 minutes.
