These delicious easy to make cookies are light and tasty. And full of nutritious walnuts.
50g vegan butter
2 tablespoons of honey
1 tablespoon of ground flax mixed with 3 tablespoons of water
150g of whole-wheat flour
25g almond flour
1 teaspoon of baking powder
75g chopped walnuts
Preheat the oven to 350F. Line a baking sheet with parchment paper. Melt the butter with the honey (either in microwave or on the stove). Let it cool to tepid and then add the beaten egg. Mix in the flour, almond flour, baking powder and chopped walnuts to form a soft dough. Shape into small balls (about 1 tablespoon of dough sized) and place on the baking sheet. Press down with a spatula to flatten them. Bake for 15-20 minutes.
