1 cup of rice makes 2 servings.
2 black cardamom pods
1 large bay leaf
1⁄2 cup chopped onion
1 cup brown basmati rice
1 & 1/2 cups water or vegetable stock
Salt and pepper to taste
Split open the cardamom pods and remove the seeds, discarding the pods.
Crush the seeds with a mortar and pestle.
Add all the ingredients to an instant pot. Cook for 22 minutes then leave for 10 minutes to allow the pressure to release naturally
Uncover and fluff with a fork.
