Corn Tortillas

To make 4 large or 6 smaller tortillas

Ingredients

  • 1 cup of Masa Harina
  • 1 tablespoon of olive oil
  • 1/8 teaspoon salt
  • 1/2 to 3/4 cup of hot water

Method

Mix the dry ingredients, slowly add the hot water until you have a firm dough. Cover the dough and leave it to rest for at least an hour.

When you are ready to cook, pre-heat a griddle or flat pan. Shape the dough into balls roughly the size of golf balls if you are making 4 tortillas. Flatten between two pieces of wax paper until about 6 inches in diameter. Place each tortilla on the griddle for about 1 minute per side.

I usually serve them with mango salsa and a tray of roasted peppers, onions and baked tofu, and guacamole.
