Vegan Clafouti

Clafouti has been one of my favorite desserts for a while, but as I am no longer eating dairy products I had to find a way to make it without animal products. Mission accomplished! This is a delicious recipe for vegan clafouti. 

Ingredients

  • 14 ounces of  silken tofu
  • ½ cup almond flour
  • ½ cup coconut milk
  • 1 tablespoon chickpea flour
  • 1 peeled and cored apple or pear
  • 2 dates
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon of salt
  • 1lb of chopped fruit (I often use pears) 

Method

Pre-heat the oven to 350F. Put the chopped fruit into a 10″ pie dish. Put all the other ingredients including the peeled and cored apple into a food processor and blend together. Pour over the fruit in the pie dish and bake for 50 minutes until set. Serve warm or cold.
