Lemon and almond cookies


Ingredients
1 cup of almond flour
3 tablespoons of potato starch
2 tablespoons of wholewheat flour
1/8 teaspoon of baking soda
1/8 teaspoon of salt
1 tablespoon of coconut sugar
1 tablespoon of coconut oil, melted
3 tablespoons of date syrup or maple syrup
1/2 teaspoon of vanilla essence
zest of 1/2 a lemon
1 teaspoon of lemon juice

Method
Turn on the oven to 350F. Combine all the dry ingredients in a bowl. Mix together. Add the rest of
the ingredients. Mix together to a sticky dough. Divide into 8 or 10 pieces (depending on the size
of cookie you like), then roll into balls. Place on a baking sheet, flatten to cookies, and then bake the cookies for 15 minutes. Let the cookies cool on the baking sheet before serving.
