1 tablespoon non-dairy butter
5 tablespoons of semolina
1 cup of water
1 cup of coconut milk
1/4 teaspoon of cardamon
1/2 cup of mango pieces or mango puree
Makes 4 desserts.
Heat the butter and add the semolina, cook for a few minutes until it thickens then slowly add the water stirring as it thickens. Add the sweetener and cardamon. Add the coconut milk and keep stirring for another few minutes until the mixture thickens.
Share the mango between 4 small bowls or ramekins. Pour the semolina on top. Sprinkle some date sugar over the custards and leave to cool.
