Cashew Cream

This is easy to make and very versatile. You can add different flavorings besides lemon to make the cream savory or sweet.


  • 1 cup of raw cashews or cashew pieces soaked for at least an hour in filtered water
  • 1/4 of a cup of filtered water
  • Optional you can add any combination of the following- 2 teaspoons of lemon juice, salt and pepper, oregano, other dried herbs, garlic)
  • For a sweet cashew cream to use with cakes and desserts add 1 teaspoon of vanilla essence, 1 teaspoon of lemon juice and 1 tablespoon of honey to the blender.


Soak the cashews overnight in water with a 1/4 teaspoon of salt. Drain and rinse them well. Put everything in a food processor and blend until smooth. You may need to add more water to get the consistency that you like. This can be kept in the refrigerator for a week.
