Ingredients (makes about 4 cups)
- 50g nut butter of your choice
- 25g ground flax
- 1 teaspoon cinnamon (or switch for cardamom or ground ginger)
- 25g chia seeds
- 125g water
- 100g walnuts chopped
- 50g sunflower seeds
- 50g pumpkin seeds
- 75g coconut flakes
- 2 tablespoons of sesame seeds
- 50g oat bran
- 150g rolled oats
- 50g dried fruit (I often use either chopped apricots or currants)
Method
Mix the nut butter, ground flax, chia and water until it becomes a thick goop. Then add the rest of the ingredients except the dried fruit and mix it all together. Spread out the mixture on a large baking tray. Put it in a cold oven and set to 325F. When the oven reaches temperature, set your timer for 30 minutes. After 30 minutes, turn off the oven and leave the granola in for another 30 minutes. The goal is to dry out the mixture so it’s nice and crunchy and toasty. When you take it out of the oven, add the dried fruit to the mixture.
Serve with your favorite plant-based milk and some chopped fresh fruit or soy yogurt.
