Mango Salsa

Ingredients

Juice of ½ a lemon
½ teaspoon of salt
½ red onion
1 mango
1 bunch of cilantro
½ a cucumber
8 cherry tomatoes
1 jalapeno pepper (or less according to your taste)
1 tablespoon of white balsamic vinegar

Method

Finely slice the red onion. Mix the onion with the lemon juice and salt and leave it for 5 minutes. The lemon juice with soften the onion and make it slightly milder to taste. Dice the mango. Pick off cilantro leaves and chop them. Dice the cucumber, chop up the tomatoes, and finely chop the chili. Mix all ingredients together in a bowl with the vinegar. Serve with tacos!
