Mary’s Lentil Soup

This soup is easy to make and very satisfying to eat. The recipe comes from my mother, who is an expert at making delicious soups. It serves 4 people.

  • 1 medium onion, chopped
  • 1 clove of garlic, crushed
  • 1 tablespoon of olive oil
  • 1/2 teaspoon of ground cumin
  • 1/4 teaspoon of turmeric
  • 1 can of tomatoes
  • 2 cups of vegetable stock
  • 1/2 cup of red lentils
  • salt and black pepper to taste

Gently soften the onion and garlic in the olive oil. Add the spices, stir and cook for another minute. Add the rest of the ingredients and simmer for 20-30 minutes until the lentils are soft. Blend the soup. Add more stock or water if you prefer a thinner soup.

Red lentils
