A scrumptious fluffy cake.
175g banana (about 2 large or 3 small ripe bananas)
1 tablespoon honey
150g wholewheat flour
25g dessicated coconut
2 level teaspoons of baking powder
1 apple sliced.
Glaze – 1 teaspoon honey and 2 teaspoons of hot water
Preheat the oven to 350F
Beat together the eggs and banana until soft. Melt the honey and butter together. When tepid, beat the honey/butter mixture into the eggs and banana. Fold in the dry ingredients. Pour into a greased and lined 8″ cake tin. Arrange the apple slices on top. Bake for 25-30 minutes.
Leave the cake to cool for 10 minutes before turning it out of the tin. Make the glaze by melting the honey in the hot water and brushing it over the cake.
