A scrumptious fluffy cake.
175g banana (about 2 large or 3 small ripe bananas)
2 tablespoons ground flax mixed with 6 tablespoons of warm water
1 tablespoon honey
100g vegan butter
150g wholewheat flour
25g dessicated coconut
2 level teaspoons of baking powder
1 apple sliced.
Preheat the oven to 350F
Beat together the flax and banana until soft. Melt the honey and vegan butter together. When tepid, beat the honey/butter mixture into the eggs and banana. Fold in the dry ingredients. Pour into a greased and lined 8″ cake tin. Arrange the apple slices on top. Bake for 25-30 minutes.
Leave the cake to cool for 10 minutes before turning it out of the tin.
