Ingredients (makes about 12)
- 110g aquafaba
- 1/4 teaspoon of cream of tartar
- 25g date sugar
- 75g baby oats
- 200g nut butter
Method
Whisk the aquafaba with the cream of tartar until it is white with stiff peaks. Whisk in the date sugar for a minute. Fold in the oats and nut butter. Refrigerate for at least an hour. Heat the oven to 350F. Roll into balls, place on a baking sheet and flatten with a fork. Bake for 12-15 minutes. Allow to cool completely before eating and if you have any left over store them in the fridge.
