Sweet Potato Appetizers (serves 4 people)
2 medium or one large sweet potato
1 small tomato or a handful of cherry tomatoes
2 green onions
2 tablespoons of lemon or lime juice
1 jalapeno chili
2 tablespoons of chopped cilantro and a few leaves to garnish
Salt and black pepper
Prick the skins and bake the sweet potato in the oven or in the microwave.
It takes about 45 minutes at 425F to bake in the oven.
Chop the veggies and mash together in a bowl with lemon juice, salt and pepper to taste.
Reserve a few finely chopped tomato to use as garnish.
Once cooked and cooled, slice the sweet potato into 1/2 inch thick slices.
Top each slice with some avocado mixture, decorate with tomato and cilantro leaves.
Serve chilled or at room temperature.
