Warm lentil salad

This delicious dish serves 4 people.

Ingredients

300g carrots, quartered lengthways
2 teaspoons of cumin seeds
2 tablespoons of olive oil
2 cloves of garlic, sliced
1 red onion, sliced
400g of brown lentils, cooked
20g cilantro and 20 of mint, chopped

Dressing
1 clove of garlic, crushed
zest and juice of 1 lemon
3 tablespoons of olive oil
2 teaspoons of capers
salt and pepper

Heat the oven to 400F. Combine the carrots, cumin, onion and garlic in a roasting tray, drizzle with olive oil. Roast for 30minutes.
Combine all the dressing ingredients in a jar and shake to combine.
When the carrots are cooked, combine all the ingredients with the dressing and serve.
