4 tablespoons of date syrup
1 very ripe mashed banana
1/4 cup cocoa poweder
1 Tbsp. instant coffee powder
1 Tbsp. potato starch
1/8 tsp. salt
1 3/4 cups soy milk
1 tsp. vanilla extract
This makes enough for 6 ice pops.
Mix together the cocoa powder, coffee powder, potato starch, and salt in a medium saucepan. Add the soy milk, slowly, using a whisk to avoid lumps.
Place saucepan over medium heat; bring to a simmer. Cook, whisking often until the mixture thickens. Remove from heat and whisk in vanilla, mashed banana and date syrup..
Let it cool, whisking occasionally to prevent a skin from forming.
Pour mixture into ice pop molds and freeze.
To serve, run ice pops under hot water for several seconds to easily remove from the molds and enjoy.
