This makes about 15 delicious ginger biscuits, vegan and gluten free
1 cup of almond flour
1 cup of oat flour
1/3 cup of desiccated coconut
2 tablespoons of coconut or date sugar
2 teaspoons of ground ginger
1 teaspoon of cinnamon
1 teaspoon of baking soda
1/4 teaspoon of salt
1/4 cup of vegan butter or coconut oil
1 teaspoon of vanilla essence
3 tablespoons of molasses
2 tablespoons of soy or almond milk
Line a baking sheet with silicone pad or greaseproof paper. Pre-heat the oven to 350F.
Combine all the dry ingredients in a large bowl. Mix in all the other ingredients. It’s easy to use a mixer to do this part. Once the dough has come together, divide into cookies (about 25g each) roll into a ball then flatten them with a glass.
Bake the cookies for 12 minutes. Enjoy!
