For two people.
8oz firm tofu
2 tablespoons of soy sauce
1 tablespoon of paprika
1 tablespoon of rice wine vinegar
1 onion chopped
2 carrots peeled and chopped into approximately 1/2″cubes
1/2 lb green beans
1/4 cup of black olives, chopped
2-3 tablespoons of vegan yoghurt
Salt and black pepper to taste
1 teaspoon of lemon juice
Cut the tofu into slices. Mix together the soy sauce, paprika, and rice wine vinegar. Add the tofu and let it marinate for at least 30 minutes
Heat the oven to 425F. Spread out the onion and carrots in a baking tray. Put the tofu on top of the vegetables and put in the oven for 30 minutes.
After the tofu has been cooking for about 15 minutes, prepare the green bean sauce. Mix the chopped olives, yoghurt, lemon juice and seasoning together. Steam the green beans for about 5 minutes. When they are cooked, mix them with the yoghurt and beans. Serve alongside the tofu and roasted veggies for a tasty feast. Enjoy!
