Ratatouille

Ingredients
Serves 4 as a side

2 medium zucchini
2 peppers
3 tomatoes
4 cloves of garlic
a few sprigs of fresh oregano
Salt and pepper
Olive oil

Method
Preheat the oven to 400F. Slice all the vegetables including the garlic. Arrange them alternately in a circle, adding oregano leaves and garlic as you go, in a round baking dish. Drizzle with olive oil and season with salt and pepper.
Bake for 40 minutes and enjoy hot or at room temperature.
